La Timpa (local name for “elevation”) has a slogan: “Time and Nature”, Tempo e Natura – and no wonder: though it was founded in the not-too-distant past (2015), the property is steeped in the extraordinary natural habitat of a primeval mountainous plateau – Monti Iblei –, which rose from the Mediterranean seafloor between 23 and 5 million years ago; along a scenic route called Vallata del Carrubo, named for its majestic, centuries-old carob trees, which the Phoenicians imported into the island some two thousand eight hundred years ago… Needless to say, the estate’s entire philosophy is centered on the pristine treasures of this timeless soil: certified organic specialties that speak of a millenary heritage.

ORGANIC AGRICULTURAL PRODUCTS

The range comprises such exquisite, certified organic products as saffron – also known as “red gold” for its rareness, tiny yields and precious aromas –, extra virgin olive oil, carobs and aromatic herbs; as well as stoneground, whole grain flour from organically grown, ancient Sicilian wheat strains. This exceptionally healthful and nutritious flour is made at a historic water mill that is now part of the estate.
