There is a delicious duality to the Piedmontese kitchen.

On the one hand, royally sumptuous as befits the onetime Kings and Queens of Italy; on the other, grass-roots and rustic to match the local farming tradition. Our Experience Boxes reflect this scrumptious dichotomy…You will be able to enjoy the region’s signature merenda sinòira (a dinner and snack combo) featuring bagna cauda, a hot dipping sauce of olive oil, garlic and anchovies, and green olives stuffed with cow cheese and truffles; sup on hand-cut tajarin egg pasta and cream of porcini mushrooms from northern Monferrato; nibble dark chocolate-coated Piedmont IGP hazelnuts and complement them with that most aromatic, fragrant and fruity dessert wine, Moscato d’Asti.

You will explore some of the specialties of a region that was both the cradle of unified Italy and the birthplace of the Slow Food movement, and experience Piedmont through its flavors and unique ingredients.

The Piedmontese Aperitif Experience Box has been designed for 4 persons and has all the makings of the region’s own merenda sinòira  – an ancient tradition combining tea break or snack (“merenda”) with dinner (sina in the local dialect; merenda sinoira reads something like “dinnery snack”), a colorful, joyful forebear to today’s aperitif or apericena.

You can start off with the toasted IGP hazelnuts and the stuffed olives: the tasty cheese and black truffle filling of the latter will combine beautifully with the lush, buttery flavor of the hazelnuts.

After that, there can be nothing better than “Bagna Cauda”, one of Piedmont’s signature native dishes. “Bagna Cauda” is a hot dipping sauce of olive oil, garlic and anchovies, fondue-like, where you and your friends can dip fresh, crunchy vegetables, washing down these savory tidbits with Diva Gold artisanal beer (a specialty that gets refermented in the bottle, like Classico method sparkling wine) and staunching the strong, intense flavors with the crunchy croccantine (crispbreads), whose taste recalls focaccia. These are also perfect for dipping in the hot sauce.

PIEDMONTESE EXPERIENCE BOX DINNER

Hand-crafted in sustainable wood, our  Experience Box accommodates all you need to enjoy the finest, most authentic Piedmontese dinner. Each product is the genuine expression of its terroir, hailing from certified or organic crops and family-run, boutique estates.

Recipe

Preparation time: 20 minutes

Bring a large pot of abundant water to boil; this should take some five minutes. Salt the boiling water (c. 10 grams per liter of water) and cook the tajarin (80 grams per person) in the boiling, salted water for 2 to 3 minutes, taking care they do not overcook.

In the meantime, place the contents of the jar of porcini mushroom cream (one jar per packet of tajarin) into a saucepan and onto a low flame so it heats very gradually.

Drain the tajarin pasta a few seconds before it is fully cooked and pour into the saucepan with the porcini mushroom cream, tossing the mixture so it amalgamates properly. If you wish to season your tajarin with porcini mushroom chunks instead, which have been drained from excess oil, we suggest you toss these in a saucepan with a bit of the cooking water, so they do not dry out excessively.

If you want your dish to look spectacular, roll the tajarin with a fork and spoon and decorate the lot with a scattering of porcini mushrooms. The latter are also ideal as antipasto.

You may add a few drops of olive oil with white Alba truffles as an extra touch, and pair with a glass of Barbera d’Alba served at 16 to 18° C.

The Piedmontese Dessert Experience Box has been has been designed for 4 persons and provides chocolate, creamy spreads and crispy shortcake from the region’s celebrated pastry heritage: dark chocolate-covered IGP hazelnuts; Baci di Dama, the delightful hazelnut shortbreads that translate as “Lady’s Kisses” and look like macaroons, sandwiched together with rich, dark chocolate; Krumiri cookies, that Casale Monferrato original beloved of Italy’s Savoia family- their quaint, v-shaped appearance a nod to the luxurious moustache of King Vittorio Emanuele II; Gianduiotti, the Turinese masterpiece that is very nearly as old as unified Italy, and has come to symbolize the capital of Italian chocolate; an artisanal, hazelnut and chocolate spread that’s a match made in heaven over a slice of fragrant bread or wrapped in pastry,
be it brioche or cake – not forgetting the cool, aromatic bubbles of Moscato d’Asti DOCG, the region’s heavenly dessert wine.
